Market Outlook
Lettuce:
The supply situation continues to improve along with quality and weights. Shippers are warning that we may see some epidermal peel and fringe burn for the next few weeks.
Leaf:
Romaine, green, and red leaf markets are coming off as well with better availability. Romaine hearts remain on the stronger side. Expect to see some epidermal peel and minor tip burn.
Broccoli:
The broccoli market is lower with much better availability. Quality has been good on inbound.
Cauliflower:
The cauliflower market is near bottom with great availability and quality.
Carrots:
The Eastern carrot market is still moving up. Canada is winding down. Georgia is coming on, but with very low volume.
Celery:
The celery market is unsettled and should move lower as shippers start in Yuma. Oxnard shippers seem very short and the market there remains very strong. We are seeing good quality out of California.
Strawberries:
Growing regions in California are coming up very shorty on supplies and quality has been fair to good. The majority of the strawberries we are selling are out of Florida. Costs are up significantly on both Florida and California fruit heading into next week. We are in a demand far exceeds supply situation.
Potatoes:
Idaho potato market is about steady for next week. The deals are on #2 potatoes.
Onions:
The yellow onion market has gone up again for next week and is expected to continue to rise over the next couple of weeks. Reds are also moving up very fast. Pricing will continue to rise over the next several weeks.
Citrus:
The California lemon market is steady with great quality fruit. California Navel oranges are in good supply and we are seeing great quality on inbound. Oranges are starting to size up. Look for smaller oranges to get tighter in weeks to come. Lime market is steady with good quality overall.
Cucumbers:
The cucumber market has remained steady for next week with quality beginning to improve.
Peppers:
The green pepper market has remained very high going into next week. We are hoping to see better availability towards the end of January.
Tomatoes:
The round tomato market remains strong for next week, and quality is only fair to good. Cherry tomatoes along with grapes are about steady at elevated costs. The Roma market is declining with Mexico is ramping up. Quality has been good on inbound.
Recipe of the Week
Pumpkin Ginger Nut Muffins
Ingredients
1 1/2 cups flour
1/2 teaspoon of salt
1 cup sugar
1 teaspoon baking soda
1 cup pumpkin purée
1/3 cup melted butter
2 eggs, beaten
1/4 cup water
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon ground ginger
1 cup chopped toasted walnuts or pecans
2 Tbsp well chopped candied ginger
Method
1 Preheat oven to 350°F. In a medium sized bowl, sift together the flour, salt, sugar, and baking soda.
2 Mix the pumpkin, melted butter, eggs, 1/4 cup of water, and spices together, then combine with the dry ingredients, until just incorporated. Do not over-mix. Fold in the candied ginger and chopped nuts.
3 Spoon mixture into a prepared muffin tin. Bake for 25-30 minutes. Check for doneness with a toothpick inserted into the center of a muffin. If it comes out clean, it’s done. Cool on a rack.
