Market Outlook
Lettuce:
The lettuce market is very high and very short on supply. Very cold temperatures and ice in the fields is hampering harvest and overall supply. Demand far exceeds supply on all Iceberg items, both commodity and processed.
Leaf:
The Romaine market is adjusting down, but remains strong. Quality has been very good. The Green leaf market is very active and supply is short. Costs are higher as demand far exceeds supply. Red leaf is short and costs are strong. Quality has been good on leaf overall.
Broccoli:
The commodity broccoli market has declined slightly for next week. Product remains very short especially on processed florets. Shippers are pro-rating off of average purchases. Quality has been looking very good.
Cauliflower:
The cauliflower market has declined further with availability improving. Shippers are pro-rating on florets. Quality has been good on inbound.
Carrots:
The carrot market is steady to slightly higher. Good quality Canada product in stock.
Celery:
Celery costs are very high with light availability in Oxnard. We are seeing good quality.
Strawberries:
Market is strong for next week with very light supplies overall on California and Florida fruit. We will likely run short on supply. Quality has been fair to good on our inbounds.
Potatoes:
The market on Idaho potatoes is about steady across all sizes. Quality has been very nice on inbound.
Onions:
The Western onion market remains steady on yellows and reds for next week. Quality on onions has been good to very good.
Citrus
The California lemon market is steady with good availability. Quality has been good overall. We are seeing good quality over all on navel oranges and that market is steady. Small fruit is a great value. The Lime market is steady for next week. Overall, we are seeing fair to good quality on inbound.
Cucumbers:
The market remains high with cold weather in Florida. Light volume from Mexico as well. Quality has been good.
Peppers:
The green pepper market remains strong for next week with a wide range in quality and volume is light. Quality has been fair to good.
Tomatoes:
The round tomato market is steady to slightly higher on extra-large with overall very light supply in Florida. 5×6 and larger remain very short. Quality has been good overall. Grape tomatoes are steady/ strong. Cherry tomatoes are steady and showing good quality. The Roma market remains strong with light availability in Florida and Mexico.
Recipe of the Week
Beet and Avocado Deviled Eggs
Ingredients
7 eggs
1 medium beet
1 avocado
3 garlic cloves (peeled) or handful of wild garlic leaves
1 tablespoon of olive oil
1 teaspoon of salt
Instructions
Place eggs in saucepan and cover with two inches of water. Bring to boil, then turn the heat to low and cook for another minute. Turn off the heat, cover and leave for 13 minutes. Drain water and cool the eggs with cold water.
Place the beet in a saucepan and cover it with water. Bring to a boil, then lower the heat and simmer until beet is fork tender. Take the beet out of the water and let it cool completely. You can speed up this process by soaking the beet in cold water. Peel off the skin and cut the beet into small pieces.
Peel the eggs and slice them in half lengthwise and remove the yolks.
Place cooked beet, egg yolks, ½ teaspoon of salt and tablespoon of olive oil in to a food processor. Process until smooth and transfer into a bowl.
Place avocado and ½ a teaspoon of salt and garlic into a food processor and process until fully combined.
Transfer beet mixture into a piping bag and fill cooked egg whites.
Transfer the avocado mixture into a cleaned piping bag and pipe avocado mixture on top of beet mixture.
Serve immediately
